Tasting Notes
The initial aromatics comprise of rich caramel, apple blossom, and pretty white flower. The palate is lively, and the acidity here perfectly complements the more textural component of the mid palate profile. Zesty acid facilitates more delightful caramel and vanilla through the finish, along with lemon tart and graham cracker.
Food Pairing Notes
The 2019 was aged with a bit more oak which can often times be a bit tricky to pair, primarily because the oak in the wine has a tendency to overpower many dishes that would traditionally couple well with Chardonnay. Salmon is generally an excellent complement to Chardonnay. But in this case, the dish we are pairing the wine with, Salmon Rillettes, is the perfect compliment. The dish calls for smoked salmon, which goes so well with the oak in the Chardonnay, while the acidity and apples flavors in this crisp Chardonnay and the lemon in the Salmon keeps the pairing super fresh and complimentary.
