The nose is bright citrus, lemon meringue, key lime, and flinted limestone. This wine was aged 23
months sur lie (on heavy lees) in 25% new French oak barrels, which opens subtle notes of warm
candied apple, shaved graham cracker, and vanilla spice. Extended barrel age also showcases a soft mid
palate, taming the otherwise edgy acidity typical of this terroir. Palate flavors of lemon and lime and
green apple play nicely together, escorting this wine to a soft, lengthy finish bursting with more bright
fruit and oak inspired vanilla.
Food Pairing Notes
This decidedly structured and firmly oaked Chardonnay compliments a variety of food dishes including butternut squash, roasted chicken, grilled halibut, or mild sheep’s milk cheeses.
